Whisk the egg with the sugar and butter until smooth. Then add the polenta and the flour (after sifting it with the baking powder) to the mixture.
Kneed the dough and then refrigerate for half an hour
Roll the dough and cut it into 2cm pieces.
Lay them on a baking sheet and bake for approximately 10 minutes in a 180°C preheated oven.
Tips
The recipe I found called for 130 grams of sugar. I added only 90 grams but the cookies were a bit too sweet for my taste, so next time I will use even less.
1 teaspoon of baking powder can be replaced with 1 teaspoon of baking soda and 1/4 teaspoon lemon juice
To keep homemade cookies soft, let them cool after they come out of the oven. Put the cooled cookies in an air-tight container and store them.
