Ingredients
- 6 eggs
- 2 breakfast sausages
- 1/4 bell pepper
- 1/2 small onion
- 1/2 potato
- 1 cup cheese
- Spices (cumin, coriander, salt and pepper) to taste
- Vegetable oil
Method
- Heat oil in a large nonstick skillet over medium heat.
- Cook sausages, onions and peppers for about 3-5 minutes, or until cooked through.
- Crack eggs in the pan and mix around until cooked.
- Season with spices.
- Add shredded cheese and stir until cheese is melted.
- Enjoy!
Tips
- Optional add in’s – mushrooms, tomatoes, parsley, cilantro, avocado or sour cream
